Elevate any meal with a delicious egg salad sandwich on your choice of bread or buns, perfect for picnics or any occasion.
Ingredients:
  • 2 tablespoons plain nonfat yogurt
  • 2 tablespoons light mayonnaise
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon ground black pepper
  • 0.25 cup diced celery
  • 1 green onion, chopped
Instructions:
  • In a saucepan, submerge the eggs in cold water and bring to a boil over medium-high heat. Once boiling, cover the saucepan, remove from heat, and let the eggs sit for 15 to 20 minutes. Drain and cool the eggs under cold running water until chilled. Refrigerate for a minimum of 2 hours or for up to 7 days before serving.
  • In a bowl, mash peeled, hard-cooked eggs using a fork or potato masher until finely chopped.
  • Mix together yogurt, mayonnaise, Dijon mustard, salt, and pepper until velvety. Fold in celery and green onion (if desired) until well blended.
  • Enjoy this delicious mixture on your choice of bread, pita halves, or salad greens.
