Sizzling sirloin

Ingredients:
  • 2 large aubergines (800g total)
  • 300 g sirloin steak (ideally 1.5cm thick)
  • 300 g ripe mixed-colour cherry tomatoes
  • ½ a bunch of fresh basil (15g)
Instructions:
  • Pierce the aubergines and microwave in a covered bowl on high for 10 minutes until soft. Remove and set aside. Trim the fat off the sirloin and place it in a cold non-stick frying pan. Heat the pan to medium-high, swirl the fat around to grease the pan, trim off any sinew from the steak, season with salt and pepper. Peel and slice the garlic, and cut the tomatoes in half. Sear the steak for 2 minutes on each side in the hot pan, then allow it to rest on a plate; discard the fat. Cook the garlic in the same pan. Remove the aubergine stalks, chop the flesh, and add it to the pan with the tomatoes. Mix in most of the basil, red wine vinegar, and season to taste. Plate the vegetables, slice the steak, arrange on top, sprinkle with remaining basil, and drizzle with olive oil and juices.
