Sizzling steak burritos

Colorful veggie dish with black beans, packed with 3 daily servings, rich in protein for muscle recovery. Enjoy the goodness!
Ingredients:
  • 2 x 120g beef minute steaks
  • 1 clove of garlic
  • 1 baby gem lettuce
  • 20 g Cheddar cheese
  • 1 x 400g tin of black beans
  • ½ teaspoon ground cumin
  • 100 g cherry tomatoes
  • 1 lime
  • ¼ of a bunch of fresh coriander
  • 2 wholemeal flour tortillas
Instructions:
  • Allow the steaks to reach room temperature. Finely chop the garlic, roughly chop the lettuce, and grate the cheese. Heat olive oil in a non-stick pan, add half the beans along with some of the liquid. Cook with garlic, cumin, salt, and pepper until thickened. Combine diced pepper and cherry tomatoes in a bowl, add lime juice, olive oil, and coriander. Preheat a griddle and cook the steaks for 1½ minutes on each side. Let them rest. Mash the beans and spread on tortillas. Top with sliced steak, cheese, lettuce, and salsa. Wrap and serve.
