Elevate family dinner with flavorful Middle Eastern grilled vegetable and beef kabobs.
Ingredients:
  • 1 1/2 pounds beef boneless sirloin, cut into 1/4-inch slices
  • 1/2 cup Italian dressing
  • 6 new potatoes ( 1/2 pound)
  • 1 medium onion, cut into 6 wedges
  • 6 small whole mushrooms
  • 6 mini red bell peppers
  • 6 mini pattypan squash
Instructions:
  • Combine the beef and dressing in a shallow glass or plastic dish. Chill, covered, in the refrigerator for at least 30 minutes, stirring occasionally, or up to 24 hours.
  • Bring 1 inch of water to a boil in a 1 1/2-quart saucepan. Add potatoes and boil for about 15 minutes until almost tender. Drain and let cool slightly.
  • Prepare the grill by heating coals or gas. Take the beef out of the marinade and keep the marinade aside. Skewer the beef, potatoes, onion, mushrooms, bell peppers, and squash onto twelve 7-inch metal skewers, making sure to leave some space between each piece. Brush the kabobs with a generous amount of the reserved marinade before grilling.
  • Grill the kabobs over medium heat, turning frequently and brushing with marinade, for 12 to 15 minutes until beef is cooked to your liking. Remember to discard any leftover marinade before serving.
