Skillet bread spinach dip

Delight guests with this irresistible baked spinach dip.
Ingredients:
  • 255g plain flour
  • 2 tsp (1 sachet/7g) dry yeast
  • 1.20 gm salt
  • 18.20 gm olive oil
  • 20g butter, melted
  • 100g semi-dried tomatoes, finely chopped
  • 250g pkt frozen spinach, thawed
  • 250g cream cheese
  • 160g sour cream
  • 1/2 x 40g pkt French onion soup mix
  • 40g parmesan
Instructions:
  • Prepare spinach dip: Drain the spinach by pressing it in a sieve over a bowl. Discard the liquid. Blend spinach in a food processor with cream cheese, sour cream, and soup mix until smooth. Season to taste and chill in the fridge until serving.
  • In a large bowl, mix together flour, yeast, and salt. Create a well in the center. In a separate jug, combine 3/4 cup (185ml) lukewarm water and oil. Pour this mixture into the well of the flour. Stir until a soft dough comes together. Transfer the dough to a lightly floured surface and knead for 5 minutes until smooth and elastic. Divide the dough into 12 portions and shape each into a ball.
  • Prepare the 24cm ovenproof frying pan by greasing it. Grease the outside of a 14cm bowl. Place the bowl in the center of the pan. Arrange the dough balls around the edge of the pan. Brush the dough with melted butter, cover with a tea towel, and let it sit in a warm place for 30 minutes or until the dough doubles in size.
  • Preheat the oven to 220C. Mix together the tomato, spinach dip, and half of the parmesan in a bowl. Place the dough balls around the edge of the pan. Fill the centre with the dip mixture. Sprinkle the dough with the rest of the parmesan. Bake for 30 minutes until the bread sounds hollow when tapped. Let it stand for 10 minutes before serving.
