Skillet Fish and Vegetables

"Delicious seafood skillet dinner with fish and veggies, ready in just 20 minutes!"
Ingredients:
  • 1 (14 1/2-oz.) can ready-to-serve chicken broth
  • 1 cup fresh baby carrots, quartered lengthwise
  • 1/2 cup chopped celery
  • 1 tablespoon dried parsley flakes
  • 1 3/4 cups uncooked instant brown rice
  • 1 lb. orange roughy fillets
  • 1/4 teaspoon garlic-pepper blend
Instructions:
  • In a large nonstick skillet, mix together the broth, carrots, celery, and parsley flakes. Let it come to a boil, then lower the heat to medium-low, cover, and cook for 3 minutes.
  • Uncover the skillet and bring it back to a boil. Stir in the rice, then place the orange roughy fillets on top and sprinkle with the garlic-pepper blend. Reduce the heat to medium-low, cover, and cook for 10 to 15 minutes until the liquid is absorbed and the fish flakes easily with a fork. Optionally, garnish with fresh parsley sprigs.
