Zesty corn relish pairs perfectly with quick and flavorful fish fillets. Ready in just 15 minutes!
Ingredients:
  • 1 can (11 oz) whole kernel corn, red and green peppers, drained, rinsed
  • 2 tablespoons sliced green onions (2 medium)
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon ground cumin
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon pepper
  • 4 cod or halibut fillets (1 lb)
Instructions:
  • Combine all relish ingredients in a medium bowl and set aside.
  • Combine 1/4 teaspoon of cumin and pepper in a small bowl, then sprinkle on both sides of the fish fillets.
  • Preheat a 12-inch nonstick skillet over medium-high heat. Add the fish and cook for 5 to 8 minutes, flipping once, until the fish easily flakes with a fork. Serve the fish with the relish.
