Crispy fried green tomatoes with tangy remoulade, a perfect late summer side dish.
Ingredients:
  • 1/2 cup finely chopped celery, plus leaves for garnish
  • 1 chopped green onion, plus more for garnish
  • 1 clove minced garlic
  • 3 tablespoons mayonnaise
  • 3 tablespoons plain skyr (Icelandic-style yogurt)
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon hot sauce
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper, plus more for garnish
  • 2 green tomatoes, cut into 1/4-inch slices
  • 1 tablespoons olive oil, plus more for garnish
Instructions:
  • Combine celery, green onion, garlic, mayonnaise, skyr, lemon juice, mustard, hot sauce, salt, and pepper in a small bowl to create a flavorful remoulade sauce.
  • In a large cast-iron skillet over high heat, heat oil. Cook tomato slices in batches, adding more oil as needed, until lightly browned on both sides, about 6 minutes.
  • Plate the tomatoes with a dollop of remoulade, and top with celery leaves, more green onion, freshly ground pepper, and a drizzle of oil.
