Enhance your ground beef stew with savory Progresso® beef broth for a quick and delicious skillet dinner ready in 30 minutes!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1/2 teaspoon pepper
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 package (8 oz) sliced fresh mushrooms (about 3 cups)
  • 1 1/2 cups Progresso™ beef-flavored broth (from 32-oz carton)
  • 1/3 cup heavy whipping cream
  • 4 teaspoons Dijon mustard
  • 1 lb unpeeled Yukon Gold or red potatoes, cut into 1/2-inch cubes (3 medium)
  • 2 medium carrots, thinly sliced (1 cup)
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In a large nonstick skillet, sauté the beef over medium-high heat for 5 to 7 minutes until cooked through; then drain any excess fat. Season with salt, pepper, and flour. Add the mushrooms and cook for an additional 3 minutes, stirring occasionally.
  • Mix the broth, whipping cream, and mustard in a small bowl with a wire whisk. Pour the mixture into the beef, then stir in the potatoes and carrots.
  • Lower the heat to a gentle simmer and cover the pot. Allow the vegetables to cook for 15 minutes until they are tender and the sauce has slightly thickened. Just before serving, garnish with a sprinkle of fresh parsley.
