Whip up a vibrant dish with peppers, onions, golden raisins, and sunflower nuts as a tasty side or topping.
Ingredients:
  • 3 medium green, red or yellow bell peppers, cut into 1/4-inch strips (3 cups)
  • 1 medium onion, thinly sliced
  • 1/4 cup golden raisins
  • 1 tablespoon salted sunflower nuts
  • 2 teaspoons lemon juice
Instructions:
  • Prepare a 10-inch nonstick skillet by coating it with nonstick cooking spray and then heat it over medium heat.
  • Toss in bell peppers, onion, and raisins and sauté for 2 to 4 minutes until vegetables are tender-crisp. Mix in the rest of the ingredients.
