Buttery balsamic Brussels sprouts with bacon in a skillet - a quick and versatile side dish.
Ingredients:
  • 4 slices thick-cut bacon, sliced into 1/4-inch strips, or more to taste
  • 1 pound Brussels sprouts, trimmed and halved lengthwise
  • 1 clove garlic, thinly sliced, or more to taste
  • 0.5 cup chicken stock
  • 1 tablespoon butter, or to taste
  • 1 tablespoon balsamic vinegar, or to taste
  • salt and ground black pepper to taste
Instructions:
  • Fry bacon in a spacious cast iron skillet on medium heat until lightly crispy, about 5 to 7 minutes. Place on a paper towel-covered plate, keeping the bacon fat in the skillet.
  • Sear Brussels sprouts in the skillet, cut-sides down, in the flavorful bacon grease over medium-high heat until lightly browned, for about 2 to 3 minutes.
  • Toss in the garlic and cook until aromatic, approximately 30 seconds.
  • Add chicken stock to the skillet and cover it to simmer until Brussels sprouts turn bright green, about 3 to 5 minutes. Uncover the skillet and keep simmering until the liquid evaporates and the sprouts reach your desired tenderness, another 3 to 5 minutes.
  • Take the skillet off the heat and combine bacon, butter, balsamic vinegar, salt, and pepper, stirring until the butter melts.
