Skin-on Potato Salad

Spicy green chili salad that will delight any crowd.
Ingredients:
  • 4 pounds red potatoes (12 medium)
  • 3 cups mayonnaise or salad dressing
  • 2 tablespoons white vinegar
  • 2 tablespoons yellow mustard
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 4 medium celery stalks, chopped (2 cups)
  • 2 medium onions, chopped (1 cup)
  • 2 cans (4 oz) Old El Paso™ Chopped Green Chiles, drained
Instructions:
  • Bring a pot of salted water to a boil in a Dutch oven. Add the potatoes, cover, and simmer.
  • Boil until tender for 30-35 minutes. Drain and cool slightly before cutting into cubes (approximately 12 cups).
  • Combine the mayonnaise, vinegar, mustard, salt, and pepper in a large 8-quart glass or plastic bowl. Mix in the potatoes, celery, onions, and chilies, and toss to coat evenly.
  • Chill in the fridge for around 4 hours, or until cold.
