Nutritious skin-on mashed potatoes made with any type of potato for a simple and delicious side.
Ingredients:
  • 2 pounds russet baking potatoes, unpeeled and cubed
  • 0.5 cup butter
  • 0.25 cup milk
  • 2 tablespoons sour cream
  • 2 teaspoons chopped garlic
  • 2 teaspoons dried basil
  • salt and ground black pepper to taste
Instructions:
  • 1. Boil a pot of lightly salted water. Add potatoes and cook until tender, approximately 15 minutes. Drain and transfer to a large bowl.
  • Combine butter with potatoes and use a potato masher or electric mixer to create a smooth mixture. Stir in milk and sour cream, mashing until reaching desired texture. Avoid overmixing once creamy.
  • Incorporate minced garlic and freshly chopped basil into the creamy mashed potatoes, then season with a touch of salt and pepper to enhance the flavors.
