Try crispy sweet potato chips with zesty piri-piri seasoning for a tasty twist on classic fries.
Ingredients:
  • 80ml (1/3 cup) water
  • 100g (1/2 cup) caster sugar
  • 3 small (about 250g each) orange sweet potatoes (kumara), peeled, cut into 2mm-thick slices
  • 2 tsp cumin seeds
  • 4.80 gm sea salt flakes
  • 2.50 gm dried piri piri seasoning (MasterFoods brand)
  • Bought tzatziki, to serve
Instructions:
  • Preheat oven to 180°C. Line 2 baking trays with non-stick baking paper. In a medium saucepan over low heat, combine water and sugar. Cook and stir for 5 minutes until sugar dissolves. Remove from heat and let it cool for 10 minutes. Add sweet potato and let soak, stirring occasionally, for 15 minutes.
  • Combine cumin, sea salt flakes, and piri piri seasoning in a bowl.
  • After draining the sweet potato, discard the syrup. Arrange the sweet potato in a single layer on the prepared trays and sprinkle with half of the salt mixture. Bake in a preheated oven, swapping trays halfway through, for 20 minutes. Flip the sweet potato slices, sprinkle with the remaining salt mixture, and bake for an additional 20-30 minutes until lightly browned. Allow the sweet potato chips to cool for 25 minutes before serving.
  • Serve a generous dollop of tzatziki in a bowl along with sweet potato chips.
