Skinny Homemade Pizza

Healthy pizza alternative with lower calories, less fat, and more vitamin A than traditional pizza.
Ingredients:
  • 1 1/3 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup fat-free (skim) milk
  • 2 tablespoons olive oil
  • 1 1/2 cups shredded reduced-fat mozzarella cheese (6 oz)
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained
  • 1 cup fresh baby spinach leaves, coarsely chopped
  • 1 cup yellow or green bell pepper strips
  • 1/4 teaspoon dried oregano leaves
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 2 tablespoons freshly shredded Parmesan cheese
Instructions:
  • Preheat the oven to 400°F. Combine flour, baking powder, and salt in a medium bowl. Mix in milk and oil until a soft dough forms. If the dough is dry, add 1 to 2 tablespoons of additional milk. Knead the dough on a lightly floured surface 10 times, then shape into a ball. Cover with a bowl and let it rest for 10 minutes.
  • Place the dough on an ungreased cookie sheet and gently flatten it. Roll it out into a 12-inch round, then bake for 8 minutes.
  • Spread a generous layer of mozzarella cheese over the crust, then add the rest of the toppings. Bake for 15 to 20 minutes until the crust is a light golden brown and the cheese starts to brown. Slice into wedges before serving.
