Skinny Nut and Berry Salad Toss

Healthy chicken and goat cheese salad with raspberry vinaigrette. Low in saturated fat and sodium.
Ingredients:
  • 1/3 cup raspberry vinegar
  • 2 tablespoons snipped fresh mint
  • 2 tablespoons honey
  • 1 tablespoon canola oil
  • 1/4 teaspoon salt
  • 4 cups packaged fresh baby spinach leaves
  • 2 cups chopped cooked chicken breast
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup fresh blueberries or Cascadian Farm™ frozen organic blueberries, thawed
  • 1/4 cup walnuts, toasted and coarsely chopped
  • 1 ounce semisoft goat cheese, crumbled
  • 1/2 teaspoon freshly ground black pepper
Instructions:
  • To make the vinaigrette, simply combine vinegar, mint, honey, oil, and salt in a screw-top jar. Shake vigorously until well combined.
  • Combine fresh spinach leaves, cooked chicken pieces, ripe strawberries, juicy blueberries, crunchy walnuts, and creamy goat cheese in a spacious bowl. Distribute the mixture onto individual salad plates, then generously drizzle with your favorite vinaigrette and finish off with a sprinkle of freshly ground black pepper. Enjoy your delicious and nutritious salad!
