Skinny cottage cheese pancakes topped with fresh fruit - a family favorite!
Ingredients:
  • 1.5 cups cottage cheese
  • 1 cup eggs
  • 2 tablespoons all-purpose flour
  • 2 tablespoons coconut oil
  • 0.5 teaspoon vanilla extract
Instructions:
  • Combine cottage cheese, eggs, flour, coconut oil, and vanilla extract in a blender and blend until smooth batter forms.
  • Preheat a lightly oiled griddle over medium-high heat. Spoon batter onto the griddle and cook until bubbles form and edges are dry, about 3-4 minutes. Flip and cook until browned on the other side, about 2-3 minutes. Repeat with the rest of the batter.
