Slovak Nut Rolls

Delicious Slovak Roshky filled with sweet lekvar spread. Makes 7-8 loaves or can be used for lekvar squares. Perfect all-day baking project.
Ingredients:
  • 2 cups margarine
  • 6 eggs
  • 1 cup white sugar
  • 2 cups sour cream
  • 1 cup milk
  • 12 cups all-purpose flour
  • 2 (.25 ounce) packages active dry yeast
  • 1 pound ground walnuts
  • 0.125 teaspoon ground cinnamon
  • 8 ounces apricot preserves
  • 1 tablespoon lemon juice
  • 0.25 cup butter, melted
  • 1 egg yolk
Instructions:
  • Make two flavorful fillings. Combine walnuts, 1 cup sugar, and 1/8 teaspoon of cinnamon in one bowl. In another bowl, mix lekvar with lemon juice and a dash of cinnamon.
  • Combine 1 cup sugar, 2 cups butter or margarine, and 6 eggs in a large bowl. Mix until smooth. Stir in sour cream, milk, flour, yeast, and salt. Beat until dough is not sticky.
  • Shape the dough into 7 or 8 balls, then roll each ball into a rectangle on a lightly floured surface.
  • Brush the dough with luxurious melted butter, generously fill with flavorful fillings, and expertly roll tight. Place on greased pans, allowing them to rise to perfection for about 4 hours before baking.
  • Gently glaze the tops with a shiny layer of beaten egg yolk right before baking in the oven.
  • Bake at 350°F (175°C) until beautifully golden brown, about 20-25 minutes.
