Slow-cooked whole BBQ chicken with Alabama-inspired seasoning and creamy white sauce.
Ingredients:
  • 0.25 teaspoon cayenne pepper
  • 1 onion, cut into 1/4-inch thick rings
  • 0.75 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon poultry seasoning
  • 3 cloves garlic
  • 1 (3 pound) whole chicken, skin removed
  • 1 tablespoon melted butter, or as needed
  • 0.5 cup water
  • 0.5 teaspoon liquid smoke flavoring
  • 0.75 cup mayonnaise
  • 2 tablespoons cider vinegar
  • 2 teaspoons white sugar
Instructions:
  • Layer the onion at the base of the slow cooker and combine 3/4 teaspoon salt, 1/2 teaspoon black pepper, paprika, and poultry seasoning in a small bowl by whisking together.
  • Fill the chicken cavity with garlic cloves, brush the entire chicken with melted butter, and sprinkle the paprika mixture all over. Place the chicken, breast-side up, in the slow cooker. Pour water into the slow cooker and sprinkle the liquid smoke over the chicken.
  • 1. Cook on High for 1 hour before switching to Low heat and continuing to cook for 8 hours. Remove meat from bones, shred using two forks, halve onions, and return both to the slow cooker.
  • As the chicken cooks, combine mayonnaise, cider vinegar, white sugar, remaining salt, black pepper, and cayenne pepper in a bowl. Whisk until smooth. Cover with plastic wrap and chill for at least 1 hour to blend flavors.
  • Drizzle 2 to 3 tablespoons of sauce over the chicken mixture and let it simmer on Low for 1 hour.
