Slow cooker all-in-one chicken cacciatore recipe

Effortlessly prepare a delicious chicken cacciatore in a slow cooker with a savory tomato sauce; a delightful family favorite creating a mouthwatering aroma throughout the house.
Ingredients:
  • 1 brown onion, thinly sliced
  • 1 large red capsicum, cut into 3cm pieces
  • 2 garlic cloves, thinly sliced
  • 6 skinless chicken thigh cutlets
  • 2 x 400g cans crushed tomatoes
  • 3 large sprigs fresh basil
  • 250.00 ml dried elbow pasta
  • 220g jar pitted kalamata olives, drained
  • 187.50 ml frozen peas
  • Fresh basil leaves, to serve
Instructions:
  • In the slow cooker bowl, combine onion, capsicum, and garlic. Lay chicken on top of vegetables. Pour tomatoes over the chicken. Garnish with basil sprigs and season with salt and pepper. Cover and cook on HIGH for 3 hours (or LOW for 6 hours).
  • Strip the basil leaves and discard the sprigs. Surround the chicken with pasta and olives. Cook on HIGH for 30 minutes or until chicken is fully cooked. Add peas and gently mix into the sauce. Cook on HIGH for 15 minutes or until peas are vibrant green and pasta is tender. Serve with an extra sprinkle of basil leaves.
