Effortlessly make juicy pulled pork sandwiches using Reynolds® Slow Cooker Liners for mess-free cooking. Enjoy summer flavors with ease!
Ingredients:
  • 1 Reynolds® Slow Cooker Liner
  • 2 medium onions, sliced into thin wedges
  • 0.5 cup light beer or water
  • 1 (2 pound) boneless pork loin roast, trimmed of fat
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin, divided
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon garlic powder
  • 1 cup barbecue sauce
  • 0.25 cup cider vinegar
  • 1 tablespoon honey
  • 0.5 teaspoon ground ginger
  • 12 whole wheat hamburger buns, split and toasted
  • 1 (8 ounce) package pre-shredded cabbage and carrots
  • 0.25 cup olive oil
  • 2 teaspoons lime zest
  • 3 tablespoons lime juice
  • 1 jalapeno, thinly sliced
  • 0.25 teaspoon black pepper
Instructions:
  • Place a Reynolds® Slow Cooker Liner in a 5- to 6-quart slow cooker for easy cleanup.
  • Place the onions and beer in the slow cooker. Ensure the meat fits in the cooker, and if needed, cut it to size. Mix chili powder, cumin, black pepper, and garlic powder in a small bowl. Sprinkle this seasoning blend evenly over all sides of the meat and massage it in. Put the seasoned meat in the slow cooker.
  • Slow cook for 8 to 10 hours on low heat or 5 hours on high heat, covered.
  • Place the meat on a cutting board and shred it using two forks. Return the shredded meat to the slow cooker and gently mix in barbecue sauce, vinegar, honey, cumin, and ginger with a rubber spatula. Heat the mixture through.
  • Fill buns generously with meat using a slotted spoon. Drizzle with sauce to taste. Garnish with Lime Carrot Slaw.
  • Prepare the Lime Carrot Slaw by placing a bag of pre-shredded cabbage and carrots in a large bowl. In a screw-top jar, shake together olive oil, lime zest, lime juice, jalapeno, honey, salt, and black pepper until well combined. Pour the dressing over the cabbage mixture and toss to coat.
