Tender pulled pork with mango BBQ sauce - a flavorful blend of spicy, smoky, and sweet. Simple slow cooker recipe perfect for a delicious sandwich.
Ingredients:
  • 2 mangos
  • 1 (4 pound) pork shoulder roast
  • 2 tablespoons ground black pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon chipotle chile powder
  • 0.25 cup balsamic vinegar
  • 2 cups water
  • 2 teaspoons honey
  • 1 (1.5 fluid ounce) jigger bourbon whiskey
  • 2 (12 ounce) bottles barbeque sauce
Instructions:
  • Peel and pit mangos. Roughly chop the fruit and set aside. Season pork shoulder with pepper, salt, and 1 teaspoon chipotle powder. Place the pork in the slow cooker along with the mango pits. Add balsamic vinegar and water.
  • Cook the meat on Low until very tender for 5 to 8 hours. Drain the pork, discard the cooking liquid and mango pits, then shred using forks.
  • Blend the chopped mango until smooth in a blender. Transfer to a saucepan with honey, remaining chipotle powder, and whiskey, then bring to a simmer. Cook on medium-low heat, stirring often, until the mango thickens and darkens slightly, about 10 minutes. Stir in the barbecue sauce, then remove from heat.
  • Place the shredded pork back in the slow cooker and mix in the delightful mango barbecue sauce. Let it cook on High until the pork soaks up all the flavorful barbecue sauce, which should take about 1 to 2 hours.
