Tender slow-cooked beef brisket coated in flavorful dry rub, glazed with BBQ sauce, and broiled for a crispy finish.
Ingredients:
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon ground paprika
  • 1 teaspoon coarse salt
  • 0.25 teaspoon freshly ground black pepper
  • 0.25 teaspoon ground mustard powder
  • 0.25 teaspoon onion powder
  • 2 cups low-sodium beef broth
  • 1 teaspoon liquid smoke
  • 1 teaspoon Worcestershire Sauce
  • 0.25 cup water, or as needed
  • 1 (2 pound) beef brisket
  • 2 medium yellow onions, quartered
  • 3 large carrots, cut into 1-inch pieces
  • 0.25 cup prepared barbecue sauce
Instructions:
  • Combine the brown sugar, chili powder, paprika, salt, pepper, mustard powder, onion powder, and garlic powder in a small bowl to create a flavorful dry rub.
  • Combine beef broth, liquid smoke, and Worcestershire sauce in a separate bowl to create a flavorful cooking liquid.
  • Add onions and carrots to the slow cooker. Pour cooking liquid over the vegetables and set the temperature to High to heat up.
  • Rinse the brisket under cold water, dry it with a pat, and generously season with the dry rub. Position the brisket in the slow cooker over the bed of onions and carrots, ensuring the fatty side is facing up. Adjust the cooking liquid level so it just reaches the bottom of the brisket; if needed, add some water.
  • After 8 hours on Low, switch off the slow cooker and move the brisket to a foil-lined sheet pan. Trim fat to preference.
  • Pour barbecue sauce into a bowl and mix with 1/4 cup hot cooking liquid from the slow cooker. Use this flavorful mixture to baste the fatty side of the brisket.
  • Preheat the broiler in the oven.
  • Place the brisket in the preheated oven ensuring there is a 6-inch gap between the top of the brisket and the burner. Broil until the fatty edges begin to crisp up, which should take 2 to 4 minutes; keep a close eye to prevent burning.
  • After taking it out of the oven, allow the brisket to rest for 10 minutes. Slice the brisket thinly against the grain.
  • Transfer the vegetables from the slow cooker to a serving plate using a slotted spoon, and accompany them with the brisket.
