Slow-Cooker Beef Brisket

Tender slow-cooker brisket, perfect for family meals or sandwiches. Classic comfort food that improves with time. Ideal for prepping ahead of a gathering.
Ingredients:
  • 2 1/2 to 3 1/2 lb fresh beef brisket (not corned beef)
  • 2 tablespoons vegetable oil
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 2 cups thinly sliced onions
  • 1 cup 1 1/2-inch pieces peeled carrots
  • 5 cloves garlic, chopped
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
  • 1 cup Progresso™ beef flavored broth (from 32-oz carton)
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Rub the brisket with 1 tablespoon of vegetable oil and season with salt and pepper. In a 12-inch skillet over medium-high heat, sear the brisket for 2 minutes on the fattiest side, then flip and cook for 2 to 3 minutes until browned. Transfer the brisket to the slow cooker.
  • Turn the heat down to medium and pour in the remaining tablespoon of vegetable oil into the skillet. Sauté the onions for 5 to 8 minutes until they start to brown, stirring often. Add the carrots and garlic and cook for 1 minute. Next, mix in the tomatoes and broth, heating until it begins to simmer. Pour this flavorful mixture over the brisket in the slow cooker, cover, and let it cook on Low for 7 to 8 hours until the brisket is melt-in-your-mouth tender.
  • Transfer the juicy brisket to a cutting board; allow it to slightly cool before slicing it into delectable pieces. Serve the succulent brisket slices alongside vegetables and the rich cooking juices for a truly satisfying meal.
