Create juicy, flavorful salsa chicken in a slow cooker with just salsa and onion.
Ingredients:
  • 1 sweet onion, sliced and separated into rings
  • 1 (5 pound) whole chicken
  • 1 (20 ounce) jar salsa
Instructions:
  • Layer the slow cooker with onion rings, then nestle the chicken on top, breast-side down. Cover the chicken with salsa.
  • Roast at High until tender and juicy, approximately 5 hours. Use an instant-read thermometer to check for doneness by inserting it into the thickest part of the thigh near the bone; it should register 165 degrees F (74 degrees C).
  • Take out the chicken from the slow cooker, wrap it in a double layer of aluminum foil, and let it rest in a cozy spot for 10 minutes before slicing.
