Hearty slow cooker chicken stew with wild rice and veggies for a comforting make-ahead meal.
Ingredients:
  • 6 cups unsalted chicken broth
  • 2 cups chopped onion
  • 1.5 cups chopped carrot
  • 1.25 cups uncooked wild rice
  • 1 cup chopped celery
  • 1 (8 ounce) package sliced white mushrooms
  • 2 pounds bone-in chicken breast halves
  • 5 sprigs fresh thyme
  • 2 bay leaves
  • 3 cups 2% milk
  • 0.5 cup all-purpose flour
  • 1 tablespoon chopped fresh parsley, or to taste
Instructions:
  • Combine all the ingredients, including chicken broth, onion, carrot, rice, celery, mushrooms, garlic, salt, and pepper in a 6-quart slow cooker. Gently place the chicken, thyme, and bay leaves into the mixture.
  • Simmer gently until the chicken and wild rice are tender, about 7 hours. Use an instant-read thermometer to ensure each chicken breast reaches 165 degrees F (74 degrees C) near the bone.
  • Take out the chicken from the slow cooker. Increase the heat to High. Remove chicken bones, shred the meat, and set it aside. Lastly, discard the thyme sprigs and bay leaves.
  • In a medium bowl, gently combine milk and flour. Pour the mixture into the slow cooker and simmer on High until thickened, approximately 10 minutes. Add chicken, gently stirring. Serve garnished with parsley.
