Slow cooker Moroccan stew, a family favorite twist on the classic clay tagine dish.
Ingredients:
  • 8 skinless, boneless chicken thighs
  • 2 large onions, thinly sliced
  • 4 large carrots, thinly sliced
  • 0.5 cup dried apricots, chopped
  • 2 cups chicken broth
  • 2 tablespoons tomato paste
  • 2 tablespoons lemon juice
  • 2 teaspoons garlic salt
  • 2 teaspoons ground cumin
  • 1.5 teaspoons ground ginger
  • 1 teaspoon Hungarian paprika
  • 3 cups water
  • 2 cups couscous
Instructions:
  • Place a delightful combination of chicken thighs, onions, carrots, raisins, and apricots in the slow cooker to create a mouthwatering dish.
  • Combine chicken broth, tomato paste, lemon juice, flour, garlic salt, cumin, ginger, cinnamon, paprika, and pepper in a bowl, then drizzle over chicken and vegetables.
  • Cook the dish on High for 4 1/2 hours or on Low for 7 1/2 hours. Gently shred the chicken using 2 forks, then let it continue cooking for an additional 30 minutes.
  • In a saucepan, boil 3 cups water. Remove from heat, stir in couscous and butter. Cover and let stand for 5 to 10 minutes until water is absorbed. Fluff with a fork and serve with chicken tagine.
