Tasty Filipino chicken adobo made effortlessly in a slow cooker with minimal ingredients.
Ingredients:
  • 6 pounds skin-on, bone-in chicken thighs
  • 2 teaspoons whole black peppercorns
  • 12 cloves garlic, smashed and peeled
  • 4 bay leaves
  • 0.5 cup soy sauce
  • 1 cup distilled white vinegar
Instructions:
  • Layer chicken thighs, peppercorns, garlic, and bay leaves at the bottom of the slow cooker. Pour soy sauce and vinegar over the top, ensuring peppercorns and bay leaves are submerged.
  • Cook the chicken thighs covered on High for about 5 hours until they are no longer pink in the centers. Use an instant-read thermometer to check that the temperature near the bone of a thigh reads 165 degrees F (74 degrees C).
