Simple Southern chowder perfect for cozy winter nights. Pair with salad and cornbread for a satisfying meal.
Ingredients:
  • 1.5 cups instant white rice
  • 1 pound ground beef sirloin
  • 0.5 cup chopped green bell pepper
  • 1 cup chopped onion
  • 3 (15.5 ounce) cans black-eyed peas with liquid
  • 1 (10.5 ounce) can condensed beef broth
  • 2 (10 ounce) cans diced tomatoes and green chiles
  • 0.5 cup water, or as needed
Instructions:
  • Cook the rice as directed on the package and set it aside. In a large skillet over medium-high heat, combine ground sirloin, green pepper, and onion. Stir frequently, breaking up the beef until it's no longer pink. Drain any excess grease.
  • Place the rice, beef mixture, black-eyed peas, beef broth, diced tomatoes with green chilies, and enough water to cover everything in a 5 quart slow cooker.
  • Slow cook, covered, for 4 to 6 hours on Low heat.
