Hearty Southern slow cooker Hoppin' John with andouille sausage and ham hock, perfect for New Year's comfort.
Ingredients:
  • 1 pound dry black-eyed peas
  • 6 cups water
  • 1 large ham hock
  • 12 ounces andouille sausage, sliced
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 0.5 teaspoon salt
  • 1 pinch red pepper flakes, or to taste
Instructions:
  • In a spacious container, generously cover the black-eyed peas with cool water and let soak for 8 hours to overnight. Drain and rinse well before using.
  • In a large pot, combine 6 cups of water and the ham hock. Bring to a gentle boil, then lower heat and simmer for 1 hour until the meat is tender. Remove the ham hock onto a plate to cool down and save 4 cups of the flavorful cooking liquid.
  • In the bottom of a slow cooker, arrange soaked peas, andouille sausage, onion, celery, and garlic. Remove meat from ham hock and incorporate into the slow cooker. Sprinkle bay leaves, cumin, salt, and red pepper flakes on top. Lastly, pour the reserved cooking water over the pea mixture.
  • Cook on High for a minimum of 4 hours, or until the peas are tender.
