Simplify your holiday meal prep with these effortless slow cooker mashed potatoes.
Ingredients:
  • 5 pounds russet potatoes, peeled and cut into 1/2-inch cubes
  • 1 3/4 cups heavy cream
  • 1/4 cup water
  • 1 1/2 sticks (12 tablespoons, 6 ounces) unsalted butter, cut into 1/2-inch cubes
  • 2 teaspoons kosher salt
  • Chopped chives, to garnish (optional)
Instructions:
  • Mix together the potatoes, cream, and water in the slow cooker until well coated. Add butter on top of the potatoes and sprinkle with salt.
  • Cook covered on high for 3 1/2 hours.
  • Prepare the potatoes: Mash them with a potato masher for a chunkier texture, use a ricer, or whip them with a hand mixer. Adjust salt and pepper to taste and serve.
  • To keep warm: Serve mashed potatoes soon after cooking for the best flavor and texture. Alternatively, keep them warm in a slow cooker on the "warm" setting for up to two hours without significant changes. Note that the color may deepen over time. To reheat later: Add more butter and cream as needed as the potatoes warm up the next day. Use a hand mixer to whip them for about 45 seconds until you reach your desired consistency.
