Tender beef cooks low and slow with artichokes, olives, and tomatoes in a fragrant blend of Mediterranean seasonings.
Ingredients:
  • 1 tablespoon grapeseed oil
  • 2 pounds stewing beef
  • 1 (14 ounce) can artichoke hearts, drained and halved
  • 1 onion, diced
  • 4 cloves garlic, chopped or more to taste
  • 1 (32 fluid ounce) container beef broth
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can diced tomatoes
  • 0.5 cup pitted and roughly chopped Kalamata olives
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 0.5 teaspoon ground cumin
  • 1 bay leaf
Instructions:
  • In a large pot, heat oil over medium-high heat. Sear beef in hot oil until beautifully browned, approximately 2 minutes on each side. Transfer the beef to a slow cooker.
  • Combine artichoke hearts, onion, and garlic in the slow cooker, followed by beef broth, tomato sauce, and diced tomatoes. Mix in olives, oregano, parsley, basil, cumin, and a bay leaf for an irresistible flavor.
  • Slowly simmer the beef until it becomes tender, approximately 7 hours.
