Slow Cooker Onion Soup

Slow-cooked French onion soup topped with melty provolone cheese and crispy croutons.
Ingredients:
  • 1 large sweet onion (such as Vidalia®), cut into thin slivers
  • 1 small red onion, cut into thin slivers
  • 4 cups beef stock
  • 3 tablespoons brandy
  • 2 teaspoons soy sauce
  • 2 teaspoons Worcestershire sauce
  • 2 cups Italian-style seasoned croutons
  • 3 slices provolone cheese
Instructions:
  • In a skillet over medium heat, melt butter and cook sweet onion and red onion until softened, around 10 minutes. Stir in garlic and cook until fragrant, about 2 minutes. Transfer everything to a slow cooker.
  • Add a flavorful blend of beef stock, brandy, soy sauce, and Worcestershire sauce into the slow cooker. Season generously with salt and black pepper.
  • Simmer soup on High heat for 4 to 5 hours.
  • Preheat the broiler and position the oven rack 6 inches from the heat.
  • Divide the soup into 3 oven-proof bowls, then garnish each with croutons and a slice of Provolone.
  • Place in the preheated oven and broil until the cheese is gooey and slightly golden, approximately 3 minutes.
