Sweet and savory pork tenderloin rubbed with brown sugar, salt, and spices, slow-cooked with crushed tomatoes. Shred and serve on sliders or sandwich buns. Delicious for a crowd or family meal.
Ingredients:
  • 0.25 cup brown sugar
  • 2 tablespoons kosher salt
  • 2 tablespoons paprika
  • 1 tablespoon black pepper
  • 1 teaspoon dried thyme
  • 2 teaspoons ground coriander
  • 1 tablespoon dry mustard
  • 2 teaspoons fennel seed, crushed
  • 2 teaspoons garlic powder
  • 1 (3 pound) pork tenderloin
  • 1 (28 ounce) can RED GOLD® Crushed Tomatoes
  • 1 (14.5 ounce) can RED GOLD® Diced Tomatoes
Instructions:
  • Combine all the spices in a small bowl. Use 6 to 8 tablespoons of the mixture to rub the pork, saving the remainder. Wrap the pork in plastic wrap and refrigerate overnight.
  • Lay the pork with the fat side facing up in a slow cooker. Top it with crushed tomatoes and diced tomatoes, then cover and cook on low for 8 hours.
  • Shred the pork using two forks, adding pan juices as necessary to maintain moisture.
