Effortless Sunday pot roast with green beans: tender beef chuck slow-cooked in savory gravy with veggies.
Ingredients:
  • 3 potatoes, peeled and cut into 1-inch cubes
  • 1 cup baby carrots
  • 1.5 cups green beans, sliced diagonally (also known as "Frenched")
  • 1 (2 pound) boneless beef chuck roast
  • 1 (10.75 ounce) can cream of mushroom soup
  • 0.66666668653488 cup water
  • 1 (1 ounce) package dry onion soup mix
Instructions:
  • Evenly arrange potatoes in the slow cooker, topping them with a layer of carrots and then green beans.
  • In a hot skillet, sear the roast in olive oil until fully browned on all sides, around 2 minutes per side. Transfer the roast on top of the vegetables in the slow cooker.
  • Combine the condensed soup, water, and dry onion soup mix in a medium bowl, then pour the mixture over the roast and vegetables.
  • Slow cook for 8 to 10 hours on Low heat.
