Tender skirt steak combined with corn, romaine, avocado, and cilantro-lime dressing for a delicious, low-carb meal.
Ingredients:
  • 2 pounds beef skirt steak
  • 2 tablespoons olive oil
  • 1 tablespoon steak seasoning
  • 2 heads romaine, chopped
  • 2 ears corn, kernels cut from cob
  • 1 large avocado, diced
  • 4 mini sweet peppers, sliced
  • 1 cup grape tomatoes, sliced
  • 0.5 cup Greek yogurt
  • 0.25 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • salt to taste
Instructions:
  • Massage the steak with aromatic olive oil and a flavorful steak seasoning blend. Gently place it in the slow cooker, ensuring it's fully covered. Let it cook on Low until it's mouthwateringly tender, which should take about 8 hours.
  • Take the steak out and allow it to cool for a bit. Then shred or slice it with forks.
  • Combine crisp romaine lettuce, sweet corn kernels, creamy avocado, colorful mini peppers, and juicy tomatoes in a spacious bowl.
  • In a food processor or blender, combine yogurt, fresh cilantro, zesty lime juice, and a pinch of salt until velvety smooth.
  • Layer the steak pieces over the salad and generously drizzle the dressing on top.
