Delicious slow cooker Thai peanut pork with zesty lime - a family favorite!
Ingredients:
  • cooking spray
  • 2 red bell pepper, seeded and sliced into strips
  • 4 (8 ounce) boneless pork loin chops
  • 0.5 cup teriyaki sauce
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes
  • 0.25 cup creamy peanut butter
  • 0.5 cup chopped green onions
  • 0.25 cup chopped roasted peanuts
  • 2 limes, cut into wedges
Instructions:
  • Prepare the slow cooker by greasing it with cooking spray. Add bell pepper strips and pork chops. Drizzle with teriyaki sauce, vinegar, minced garlic, and red pepper flakes.
  • Slow cook the pork until very tender for 8 to 9 hours. Remove the pork from the slow cooker and whisk in smooth peanut butter. Return the pork to the slow cooker and cook for an additional 10 minutes.
  • Transfer the dish to a serving platter and generously top with fresh green onions and crunchy peanuts for a visually appealing garnish. Complete the presentation by adding vibrant lime wedges before serving.
