Slow-Cooker Asian Turkey and Vegetables

Savor a vibrant turkey stir-fry with zesty Szechuan sauce using frozen veggies for a nutritious meal.
Ingredients:
  • 2 to 2 1/2 lb turkey thighs, skin removed
  • 1 package (1 1/4 ounces) honey teriyaki seasoning mix
  • 1 cup water
  • 2 boxes (9 oz each) frozen Szechuan vegetables, thawed
  • 2 cups uncooked regular long-grain white rice
  • 4 cups water
Instructions:
  • Place the turkey in a 3- to 4-quart slow cooker. Combine the dry seasoning mix with 1 cup of water in a small bowl, then pour over the turkey.
  • Cover and simmer on Low for 7 to 8 hours.
  • Take the turkey out of the cooker and place it on a cutting board. Remove the meat from the bones and discard them. Cut the turkey into bite-size pieces and put them back into the cooker. Add both boxes of vegetables, increase the heat setting to High, cover, and cook for 20 to 30 minutes until the vegetables are thoroughly heated.
  • Cook the rice in 4 cups of water following the package instructions. Stir the vegetable and turkey mixture, then serve over the rice.
