Asian-inspired teriyaki turkey sandwiches - tender slow-cooked turkey in sweet glaze sauce. Finger-licking good!
Ingredients:
  • 2 bone-in turkey thighs (1 1/2 lb), skin removed
  • 1/2 cup teriyaki baste and glaze (from 12-oz bottle)
  • 2 tablespoons orange marmalade
  • 1/2 teaspoon grated gingerroot
  • 1 clove garlic, finely chopped
  • 1 tablespoon water
  • 2 teaspoons cornstarch
  • 4 kaiser rolls, split
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Add the turkey into the slow cooker. In a small bowl, combine the teriyaki glaze, marmalade, gingerroot, and garlic. Pour the mixture over the turkey, ensuring it is evenly coated by turning the turkey as needed.
  • Cover and simmer on low heat for 9 to 10 hours.
  • Take the turkey out of the slow cooker. Remove and discard the bones, then shred or cut the turkey into pieces. Keep it covered to stay warm.
  • First, in a 2-cup microwavable measuring cup, whisk together water and cornstarch until smooth. Next, pour the liquid from the slow cooker into the cornstarch mixture and stir well. Microwave the mixture on High for 1 to 2 minutes, stirring once halfway through, until it boils and thickens slightly. Finally, distribute the turkey evenly among the bottom halves of the rolls, spoon the sauce over the turkey, and cover with the top halves of the rolls. Enjoy!
