Slow-Cooker Beef Roast with Onions and Potatoes

Enhance beef roast with classic flavors of onion, potatoes for a delicious twist.
Ingredients:
  • 1 large sweet onion, cut in half, then cut into thin slices
  • 3-lb boneless beef bottom round roast
  • 3 baking potatoes, cut into 1 1/2- to 2-inch cubes
  • 1 3/4 cups Progresso™ beef flavored broth (from 32-oz carton)
  • 1 package (1 oz) onion soup mix (from 2-oz box)
  • 1/4 cup Gold Medal™ all-purpose flour
Instructions:
  • Firstly, nestle the onion at the bottom of your 5- to 6-quart slow cooker. Next, carefully untie or remove any netting from the beef roast before placing it on top of the onion. Surround the beef with the potatoes and garlic. In a separate small bowl, combine 1 1/4 cups of the broth with the dry soup mix, then pour this mixture over the beef. Remember to store the remaining broth in the refrigerator for later use.
  • Cover and simmer gently for 9 to 10 hours on low heat.
  • Transfer the beef and vegetables onto a serving platter and cover to maintain warmth.
  • Combine the remaining 1/2 cup broth and flour in a small bowl, then gradually stir into the juices in the cooker. Increase heat to High, cover, and cook for about 15 minutes, stirring occasionally, until the sauce thickens. Serve the sauce over the beef and vegetables.
