Slow-Cooker Honey Barbecue Pork Roast with Carrots

Slow-cooked pork roast with honey glazed carrots and sweet-tangy barbecue sauce for a delicious and hearty meal.
Ingredients:
  • 1 boneless pork loin or sirloin roast (1 1/2 lb), trimmed of fat
  • 1/3 cup barbecue sauce
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon pepper
  • 2 boxes (10 oz each) frozen honey glazed carrots, thawed
Instructions:
  • 1. Grease a 3 1/2- to 4-quart slow cooker with cooking spray. 2. Add pork to the slow cooker. 3. Combine all remaining ingredients, except carrots, in a small bowl and pour over the pork.
  • Slowly simmer, covered, for 6 to 7 hours on low heat setting.
  • Arrange the carrots around the pork, then turn the heat to High. Cover the dish and cook for an additional 30 minutes, or until the carrots are just tender.
  • Transfer the succulent pork from the slow cooker onto a cutting board to slice it. Artfully arrange the sliced pork on a serving platter and generously drizzle with the delectable sauce, then add the tender carrots for a delightful presentation.
