Slow-cooker Lebanese freekeh

Nutrient-rich freekeh: a diabetes-friendly, fiber-packed grain that's also irresistibly tasty for all.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 250.00 ml wholegrain uncracked freekeh, rinsed, drained well (see note)
  • 2.50 gm ground cinnamon
  • 40.00 ml currants
  • 765.00 gm vegetable liquid stock
  • 1 bunch English spinach
  • 21.00 gm lemon juice
  • 40.00 ml pine nuts, toasted
Instructions:
  • In a large frying pan over medium heat, heat oil until shimmering. Add onion and cook, stirring occasionally, until softened for about 5 minutes.
  • Place the onion in the slow cooker, then add the freekeh, cinnamon, currants, and stock. Cover and cook on high for 1 hour 45 minutes until tender and most of the stock is absorbed.
  • Add the spinach and lemon juice to the mixture, allowing the spinach to wilt, about 30 seconds. Season with salt and pepper, then serve topped with pine nuts.
