Slow-Cooker Make-Ahead Beef

Maximize the potential of boneless beef chuck roast by slow cooking and shredding for versatile meal options. Great for saving money and time during busy weeks.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 boneless beef chuck roast (2 1/2 to 3 1/2 lb)
Instructions:
  • Prepare the 5-quart slow cooker by spraying it with cooking spray. In a large bowl, combine oil, salt, pepper, and garlic powder. Add the roast and coat it evenly.
  • Preheat a 12-inch skillet over medium-high heat until sizzling. Sear the beef roast for 6 to 8 minutes, flipping once, until golden brown on both sides.
  • Place the roast in a slow cooker and drizzle 1/4 cup of water over it. Cover and cook on Low heat for 7 to 8 hours until the beef is tender and easily shreddable.
  • Place the beef on a cutting board to cool slightly. Shred the beef, removing any pieces of fat. Mix the beef with 1/2 cup of the cooking liquid and discard the rest.
  • For freezing: Separate beef into 2 portions (approximately 2 cups each). Place each portion in a freezer-safe container or a resealable freezer bag. Label with the date. Chill in the refrigerator until fully cold, around 1 hour. Store in the freezer for up to 3 months. Thaw in the fridge overnight or until fully thawed. Use in dishes that require cooked shredded beef.
  • Preheat oven to 325°F. In a large bowl, combine oil, salt, pepper, and garlic powder. Add the roast and coat it evenly. Heat an ovenproof skillet over medium-high heat. Sear the beef roast for 6 to 8 minutes until brown on both sides. Pour 1 cup water over the roast, cover, and roast in the oven for 2 1/2 to 3 1/2 hours until it reaches an internal temperature of 190°F and is easily shredable. Let the roast rest for 30 minutes after removing it from the oven. Shred the meat using 2 forks, removing any fat and cartilage. Toss the shredded beef in 1/2 cup of the pan juices. Discard the remaining liquid. Follow freezing and thawing instructions as described.
