Slow-Cooker Mexican Rotisserie-Style Chicken

Effortlessly flavorful chicken, ideal for Sunday supper or to enhance dishes all week long.
Ingredients:
  • 2 packets (.85 oz) Old El Paso™ Chicken Taco Seasoning Mix
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground red pepper (cayenne), if desired
  • 1 whole chicken (3 to 4 lb)
Instructions:
  • Prepare the 5-quart oval slow cooker by spraying it with cooking spray. In a small bowl, combine taco seasoning mix, cumin, salt, and red pepper, stirring well.
  • Dry the chicken thoroughly with paper towels, then generously coat both the inside and outside with the flavorful seasoning mixture, making sure to sprinkle any extra seasoning over the chicken breasts.
  • Arrange the chicken breast-side up in the slow cooker.
  • Cover and cook on High heat setting for 2 1/2 to 3 1/2 hours until the chicken legs move easily when lifted or twisted and a thermometer inserted in the thickest part of the inside thigh reads at least 165°F. Remove the chicken from the slow cooker and let it stand for 10 minutes before serving.
