Slow-Cooker Rosemary Pork Sliders

Enhance pork sandwiches with flavorful Progresso™ reduced-sodium chicken broth for a delectable slow-cooked meal.
Ingredients:
  • 1 boneless pork loin roast (1 1/2 lb)
  • 1/2 teaspoon freshly ground pepper
  • 1 cup water
  • 1 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
  • 1/2 cup sliced shallots (2 large)
  • 1 tablespoon chopped fresh rosemary leaves
  • 4 cloves garlic, finely chopped
  • 3/4 cup canola mayonnaise
  • 2 teaspoons prepared horseradish
  • 24 whole wheat mini burger buns, split, toasted
  • 2 cups arugula
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Next, heat a large skillet over medium-high heat. Season the pork with pepper and sear for 3 minutes on each side until nicely browned. Transfer the pork to the slow cooker and add water, broth, shallots, rosemary, and garlic.
  • Cover and simmer on Low for 8 hours.
  • Transfer the pork from the slow cooker to a large bowl. Use 2 forks to shred the pork. Strain the cooking liquid into a separate bowl, saving the shallots and garlic. Combine the shallots, garlic, and 3/4 cup of the strained cooking liquid with the pork, mixing well. Dispose of the remaining cooking liquid.
  • Combine mayonnaise and horseradish in a small bowl. Spread 1 1/2 teaspoons of the mixture on each bottom bun half. Layer with 2 tablespoons of pork mixture and arugula before adding the top buns. Enjoy!
