Savor a comforting slow-cooked squash and French bread casserole, a delectable side dish.
Ingredients:
  • 9 cups sliced yellow summer squash (about 5 medium)
  • 1 medium onion, chopped (1/2 cup)
  • 1 tablespoon butter or margarine
  • 2 cups French bread crumbs
  • 1 cup shredded sharp Cheddar cheese (4 oz)
  • 2/3 cup sour cream
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 1 tablespoon butter or margarine, melted
  • Chopped fresh Italian (flat-leaf) parsley, if desired
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. In a large microwave-safe bowl, microwave the squash, onion, and 1 tablespoon of butter uncovered on High for 10 minutes, or until the squash and onion are tender. Remember to drain well before proceeding.
  • Combine the squash mixture, 1 cup of bread crumbs, 1/2 cup of cheese, sour cream, garlic salt, pepper, and soup in the slow cooker. In a separate bowl, mix the remaining 1 cup bread crumbs, remaining 1/2 cup cheese, and melted butter. Sprinkle the crumb mixture over the squash in the slow cooker.
  • Cook covered on Low heat for 2 hours in your slow cooker. Uncover and remove the insert from the slow cooker. Allow it to stand for 30 minutes before serving, then sprinkle with parsley for a finishing touch.
