Slow-cooker upside-down mandarin and almond pudding

Create a delicious winter pudding effortlessly with your slow cooker.
Ingredients:
  • 32.00 gm brown sugar
  • 3 large mandarins
  • 125g butter, softened
  • 161.25 gm caster sugar
  • 2 eggs, lightly beaten
  • 112.50 gm self-raising flour
  • 75.00 gm almond meal (ground almonds)
  • Double cream, to serve
  • Honey, to serve
Instructions:
  • Prepare a loaf pan by greasing it and lining the base and sides with baking paper, leaving a 2cm overhang. Sprinkle brown sugar over the base of the pan. Thinly slice one mandarin and arrange the slices over the sugar. Juice the remaining mandarins.
  • With an electric mixer, whip together butter and caster sugar until fluffy. Incorporate eggs one at a time, mixing until just combined. Fold in flour, almond meal, and 1/4 cup of mandarin juice until just mixed.
  • Gently pour the mixture over the mandarin, ensuring it covers evenly. Place the pan in a 5-liter slow-cooker and cover with the lid. Set the slow-cooker to high and cook for 2 hours and 30 minutes, or until a skewer inserted in the center comes out clean. Let it sit in the pan for 5 minutes before turning it onto a plate. Serve warm with a dollop of cream and a drizzle of honey.
