Create a flavorful wild rice and vegetable medley with a slow-cooking method for a delicious side dish.
Ingredients:
  • 1 1/2 cups uncooked wild rice
  • 2/3 cup chopped celery
  • 1 tablespoon butter or margarine, melted
  • 2 teaspoons chopped fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large onion, chopped (1 cup)
  • 2 medium carrots, chopped (3/4 cup)
  • 3 1/2 cups vegetable broth (from 32-oz carton)
  • 1/3 cup pine nuts
  • 1/2 cup chopped dried cherries
  • Chopped fresh Italian (flat-leaf) parsley, if desired
Instructions:
  • Coat a 3- to 4-quart slow cooker with cooking spray, then combine all ingredients in the slow cooker, excluding pine nuts, cherries, and parsley.
  • Cover and simmer on Low heat for 5 to 6 hours until the wild rice is tender and all the liquid is absorbed.
  • Toast pine nuts in a dry skillet over medium heat for 5 to 7 minutes, stirring often until golden brown, and then continuously until light brown. Remove from heat and set aside.
  • Combine cherries and toasted pine nuts with wild rice right before serving to enhance flavors. Garnish with fresh parsley for a beautiful finish.
