Smashed celeriac

Elevate celeriac with easy roasting and mashing for a comforting, sweet and beautiful side dish.
Ingredients:
  • 1 celeriac
  • 1 handful of fresh thyme
  • 3-4 tablespoons water or organic stock
Instructions:
  • Peel the celeriac and slice about 1cm/½ inch off the bottom to create a stable base for slicing. Dice the celeriac into 1cm/½ inch cubes. Heat olive oil in a casserole pot over high heat. Add the celeriac, thyme leaves, chopped garlic, sea salt, and black pepper. Stir and fry for 5 minutes until the celeriac gets some color. Reduce heat, add water or stock, cover, and simmer for 25 minutes until tender. Season to taste and smash the celeriac with a spoon for a rustic texture. Serve alongside your choice of meat.
