Simple and delightful cake using pre-made cupcakes with homemade buttercream frosting. Watch our decorating video for step-by-step instructions.
Ingredients:
  • 14 vanilla cupcakes
  • 500g salted butter, chopped, softened
  • 1kg soft icing sugar
  • Yellow, black and brown gel food colouring
  • Pink sugar powder
Instructions:
  • Place the cupcakes in a concentric pattern on a 28cm or larger round cake board, with 10 cupcakes in the outer circle and 4 cupcakes in the inner circle.
  • In the bowl of an electric mixer, beat butter until pale and creamy. Gradually add icing sugar, beat at low speed until combined, then increase speed and whip until fluffy.
  • Combine 1½ cups of buttercream in a bowl. Blend in a few drops of brown and black gel colors, adding more and mixing thoroughly until you achieve your desired color.
  • Transfer ¼ cup of buttercream into a separate bowl. Stir in a few drops of brown gel color until you reach your desired shade, adding more color as needed.
  • Gradually add yellow gel color to the remaining buttercream, mixing well to combine after each addition until you achieve your desired color.
  • Prepare a 40cm disposable piping bag with a 1cm round nozzle and fill it with the yellow icing. Outline the cupcakes with the icing, then pipe rounds starting from the outside and work your way in until all cupcakes are covered. Use a spatula to smooth the icing, for an extra smooth finish, warm the spatula in boiling water, ensuring to shake off any excess water before spreading the icing.
  • Outline the emoji facial features using a toothpick. Prepare a piping bag with a 0.5cm round nozzle and dark brown buttercream. Fill the bag and pipe the eyes and mouth outlines, then fill them with buttercream. Prepare another piping bag with light brown buttercream, fill it, and pipe inside the eyes and mouth, then smooth with a spatula.
  • Brush the pink sugar powder on both sides of the mouth to achieve cute rosy cheeks.
